RECIPES - using Organic Soft Tofu
Tofu in Minutes
Hiyayakko (Tofu side dish)
This is really quick and easy. A simple Japanese dish, Hiyayakko.
Warm tofu. Add grated ginger on top. Drizzle with soy sauce. Finally top it with a tinge of wasabi. Serve.
OR Drizzle Vege Tofu sauce instead of ginger and soy sauce.
Alternatives:
You can eat it cold too. If you don't have ginger, that is fine too. Soy sauce alone suffices. Yes, wasabi is optional, though it gives the dish some kick. For a slightly Chinese taste, add sesame oil.
Or, instead of a savoury dish, use maple syrup for a sweet dessert. Or any syrup toppings you like.
Simply add into dishes
Cut the tofu into cubes or slices and add into Asian soups.

Puree and use as egg replacement

In a blender or food processor, puree tofu, maple syrup, banana, and vanilla until very smooth and creamy. Pour into a shallow pan and freeze overnight or for 8 hours.
Just before serving, cut frozen tofu mixture into small chunks and quickly blend to the consistency of ice cream. Spoon into dessert glasses, alternating layers with sliced strawberries. Serve immediately.
Note: Although the banana is hard to replace since it adds creaminess and masks any telltale soy taste, almost any fresh fruit in season can be substituted for the strawberries or kiwifruit. Try blackberries, peaches, pears, and apricots for variety.
